Spanish Turkey
Ingredients:
2 large turkey drumsticks (about 1 ½ Kg.)
1 cup chopped celery
1/2 cup chopped onion
1 can tomatoes, drained (reserve liquid)
1 small green pepper, slivered
1 cup liquid (reserve tomato juice and water)
1 bay leaf
1 teaspoon salt
6 stuffed green olives, sliced
2 can uncooked noodles
Preparation:
Wash drumsticks and pat them dry. Place drumsticks in baking pan and bake uncovered at 450 degrees for 20 minutes. Then lower oven to 350 degrees. Add the celery, onion, tomatoes, green pepper, liquid, bay leaf and salt. Cover the pan and bake for 2 hours. Add the olives and uncooked noodles, cover, and bake for an additional 30 minutes. Cut meat from turkey legs, discard bones, and serve at once.
