Italian Smothered Chicken Thighs
Chicken thighs are coated with seasoned bread crumbs and Parmesan cheese, then baked with vegetables in chicken broth.
Ingredients
6 chicken thighs
1 cup Italian bread crumbs
3 tablespoons grated Parmesan cheese
1/4 cup olive oil
1 small onion, sliced
1 garlic clove, sliced
3 celery stalks, chopped
1 medium carrot, thinly sliced
1 1/2 cups chicken stock, or broth (made from bouillon cubes), warmed
1 small can sliced mushrooms
Preparation:
Preheat oven to 350 degrees F. Place chicken in a bag containing Italian bread crumbs and Parmesan cheese then shake. Brown chicken in olive oil. Remove chicken to baking dish, reserving drippings in skillet. Cook onion, garlic, celery and carrot in reserved oil for 10 minutes. Add vegetables to baking dish. Pour warmed chicken stock or broth over mixture. Cover and bake for 1-1 1/2 hours, or until tender. Add mushrooms about 5 minutes before it is done.
